Hello, My name is Donald Sweeney your chef with over 24 years of experience and have developed through various companies such as Rock Garden, Hard Rock Cafe, Bull Hotel, working in the City of London, Caribbean Restaurant and meeting Chef Gordon Ramsey.
I started at Bellerbys College in Jan 2007 as the catering manager this would be a new adventure working in a school bringing all my experience to international students. Over the years, I started to travel to various countries where our students are from to learn about their cuisine and culture and return practising and presenting various dishes. The places I have travelled to are Russia, Indonesia, Malaysia, Singapore, the Philippines, Kazakhstan, Japan, Korea and more.
I plan all menus using my experience and talking with the students from various countries. Over 7 days we cover 46 different dishes which cover for the month then I change the cuisine for the next month. The most important thing when selecting a menu is quality, healthy, variety and authentic dishes is a bonus here.
MIX2MIX CATERING
My private catering venture takes me to the Caribbean field cooking authentic dishes playing with flavour's herbs and spices. Watching my mum when I was young inspired me to cook and developed my mum's skills of preparing flavoursome chicken, succulent curries baking moist and tasty cakes. Mix2mix Catering work's on delivering great food and presentation friendly and welcoming atmosphere whether it's for 10-200 people on any occasion, we set out to deliver high standards with no compromising.
HOW DO I MEASURE THE QUALITY OF FOOD?
Well, this is done by client's / people attending occasions at the end of the evening giving praises on how wonderful the food is and service provided from the staff that they book me again and pass on contacts that's a winning achievement.
DJ SERVICES
When not cooking my other job is a Dj, I have been a DJ for over 20 years and played in all the top clubs in London, a radio presenter working with Mac World Awards, and London Fashion Show. In the evening I hold a DJ workshop for the students to learn how to be a DJ and also this is very good for students who are shy to help them build on their confidence.
